Zucchini Slice...........

Zucchini Slice

375g zucchini, grated (I use approx 3 medium or 2 large)
1 large carrot, grated 
1 large onion, grated
3 bacon rashers, chopped 
1 cup grated cheese
440gram tin corn kernels
1 cup SR Flour 
½ cup oil
5 eggs

Salt and pepper to taste


Combine zucchini, carrot, onion, bacon, cheese and corn, add flour, oil and
lightly beaten eggs, salt and pepper.
Pour into greased lamington dish 16cm x 26cm. Can use bigger size just ends up thinner.
Bake in a moderate oven 30-40mins until browned.
Great to make when you have lots of eggs and can be cut into slices, frozen
and reheated.
Yummy hot or cold!

EDIT Self-raising flour is a combination of plain flour and various raising agents. These include sodium and calcium phosphates, and sodium carbonate. 
While it is preferable to use a pre-mixed product, an approximation of self-raising flour can be achieved by adding 2 teaspoons of baking powder to every 250 grams of plain flour.



Bacon rashers could be called bacon slices in your country

Isn't it funny the things we used to make all the time that we tend to forget....I have brown thumbs when it comes to growing zucchini....goodness knows why..I did manage some of the alternate green ones last year.
A while back I purchased some filo pastry to make the spinach and feta slice that was another staple in another life..I must check if the pastry is still viable.
I have a lovely brownie recipe with a ganache on top that has not seen the light of day for ages either.

Translate "rashers" ? I'm thinking strips?

What is SR flour? Is is regular baking flour? It sounds delicious and reminds me of a dish like quiche or frittata (egg dish without a pastry or crumb base) It sounds yummy- Canadian translation of rashers is strips of bacon. It is always interesting to see what things are called in other places.

I'm all zuchinni sliced out and am about to rip them out of my vegie patch! They go on for ever and ever.
I chopped the last few up and froze them on a flat tray to use in other dishes.
P.S. I really do love the slice though.

Slice? No, we wouldn't call it that.
Sounds like a breakfast casserole.
Casserole would work in this case but not the other two.
